Ingredients
- 1 medium onion, chopped
- 1 T. water
- 3 small potatoes, peeled and cubed
- 2 medium carrots, sliced
- 3 (14 1/2oz) chicken broth
- 3 C. water
- 2 T. parsley flakes
- 2 t. basil
- 1 t. oregano
- 1 garlic clove, minced
- 1/2 t. pepper
- 1 (15 1/2oz) great northern beans, rinsed and drained
- 1 (15oz) pinto beans, rinsed and drained
- 1 (15oz) garbanzo beans, rinsed and drained
- 3 C. chopped fresh spinach
Preparation
Step 1
In Dutch oven, saute onions in water. Add the next nine ingredients. Simmer uncovered until vegetables are tender. Add beans and spinach, heat through.
