Ingredients
- 1 tablespoon butter
- 3 shallots, small diced
- 5 garlic cloves, minced
- 2 poblano peppers, seeded and diced
- 1 qt heavy cream
- 1 pound cream cheese
- 2 tablespoons OLD BAY seasoning
- 1/2 bunch dill, chopped
- 1 pound crab meat
- 1 cup Jack cheese
- Salt and Pepper to taste
- 1/2 cup Parmesan cheese, fresh grated
Preparation
Step 1
1. Preheat oven to 400. In a medium saucepan, melt butter over medium heat. Sweat the shallots, garlic and 1 poblano pepper until soft.
2. Add heavy cream and reduce by a fourth. Add cream cheese and puree with a Hand Blender. Stir in the OLD BAY and dill. Mix in crab meat, 1 poblano pepper and Jack cheese. Season to taste.
3. Transfer to oven safe casserole , sprinkle with Parmesan cheese and bake for 10 minutes until hot and bubbling and the cheese is golden brown.
4. Serve with crostinis, chips or flatbread.
