Ingredients

  • 3/4 c crisco shortening
  • 3/4 c granulated sugar
  • 3/4 c light brown sugar
  • 2 eggs, beaten
  • 3 c all-purpose flour
  • 1 tsp baking soda
  • 1 tsp cinnamon, ground
  • 1 tsp ground clove
  • 1/2 tsp salt
  • 1/2 tsp ground ginger
  • 1/4 c dark molasses
  • 1/8 c cold black coffee
  • 1 c raisins
  • 1 c walnuts, chopped

Preparation

Preheat oven to 375*F.

In a medium bowl, cream together the Crisco, white sugar, light brown sugar; add beaten eggs and set aside. In separate bowl mix together dry ingredients. Add to creamed mixture. Stir in coffee and molasses.

Add raisins and nuts.

Use a small ice cream scoop to make cookies or drop by tablespoons on greased cookie sheet; brush top of cookies with eggwash.

Bake for 10-15 minutes.
