APRICOT-GLAZED CHICKEN BREASTS

Ingredients

  • 1 12-oz jar apricot jam (1 cup)
  • 1 tsp curry powder
  • 2 large chicken breasts, each cut in half
  • 1 1/2 tsp salt
  • 1/4 tsp pepper
  • 2 medium-sized tomatoes cut in half

Preparation

Step 1

In small bowl stir apricot jam and curry powder until well mixed. If jam is too thick, stir in 1-2 tsps water until easy spreading consistency.

Sprinkle chicken breasts with salt and pepper; place chicken on rack in broiling pan.

Broil about 7 to 9 inches from source of heat for 15 minutes.

Turn chicken; add tomato halves; broil 10 minutes or until chicken is tender.

Brush top of chicken and tomato halves with jam mixture; broil 2 minutes longer or until heated through.
