Aztec Onion Broth

Ingredients

  • 4 cups water
  • 1 medium tomato, cut into 1 inch cubes
  • 1/2 medium onion, or 8-10 scallions, cut into small pieces
  • 2 peeled carrots, cut into 1 inch pieces
  • 2-3 celery stalks, cut into 1 inch pieces
  • 1/4 teaspoon dried rosemary
  • 3/4 teaspoon sea salt

Preparation

Step 1

Simmer about one hour. Strain to remove vegetables.
