Ingredients

  • 2 tbsp balsamic vinegar
  • 2 tbsp olive oil
  • 1/2 tsp salt
  • 1/2 tsp sugar
  • 1/2 tsp pepper
  • 1/2 tsp cumin
  • 1/2 tsp chili powder
  • 3 tbsp cilantro
  • 1 can corn,drained
  • 15 oz can black beans, drained and rinsed
  • 1/2 c green peppers
  • 1/2 c tomatoes
  • 1/4 c red onion

Preparation

Step 1

In small bowl, mix balsamic, oil, salt, sugar, pepper, cumin, and chili powder. Set aside.

Drain and rinse black beans. Chop green peppers, tomato,cilantro and onion.

In large bowl, add black beans, corn, green peppers, tomato, cilantro and onion. Toss with vinegar mixture. Garnish with cilantro. Cover and refrigerate overnight.
