Roasted Red Bell Pepper Soup

  • 4 large sweet red peppers destemmed and seeds removed quartered lengthwise
  • 2 bulbs garlic
  • 1 lg onion sliced
  • 1 T snipped fresh rosemary...
  • 1/3 c packed fresh parsley leaves
  • 1/3 c packed fresh basil leaves
  • 1/4 t pepper1 dash bottled hot pepper sauce'
  • 4 c chix broth'
  • 1/2 c half & half



Step 1

Place seet peppers,, cut side down on a foil-lined baking sheet. Bake in a 425 degree oveen for 20-25 min or untilskin is bubbly and brown. reduce oven heat to 400. Wrap peppers in the foil. let stand for 20-30 minutes or until cool enough to handle. Usinsing a paring knife, gently and slowly pull off the skin
