Roasted Zucchini Flatbread with Hummus

Ingredients

  • 4 small zucchini, cut in thick rounds
  • 2 tbsp olive oil
  • Kosher salt
  • 4 rounds, pocketless whole-grain pita
  • 1/3 cup hummus
  • 1/4 cup crumbled goat cheese
  • 2 cups baby arugula
  • 1/4 cup chopped almonds
  • 1 lemon

Preparation

Step 1

Preheat oven to 400 degrees F
Place zucchini baking sheet, drizzle with olive oil, sprinkle with salt
Roast for 30 minutes
Warm pita on griddle, spread with 1 tbsp hummus
Top each with 1 tbsp goat cheese, 1/4 of roasted zucchini, 1/2 cup baby arugula, 1 tbsp almonds
Serve with lemon wedge
