Warm Chicken Salad

Ingredients

  • 1 pound chicken cutlets cut into 1/2" cubes
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1/3 cup balsamic vinegar
  • 2 tbs coarsely ground mustard
  • 1 tbs sugar
  • 4 tbs olive oil
  • 4 cloves finely chopped garlic
  • 1 tbs chopped fresh thyme
  • 6 + ounces arugula or spinach
  • 1 cup grapes, preferably red, cut in half
  • 1/2 cup crumbled feta cheese

Preparation

Step 1

Season chicken with salt & pepper. Mix vinegar, mustard and sugar together. Set aside.
Heat olive oil until hot. Cook chicken until it starts to brown, about 1 minute. Add the garlic and thyme and cook 1 minutes. Pour in the vinegar mixture and cook until thick and glossy, about 1 minute more.

Arrange greens on a platter. Top with chicken and warm sauce. Sprinkle with grapes and cheese.
