Ingredients
- 1 pound chicken cutlets cut into 1/2" cubes
- 1/2 tsp salt
- 1/4 tsp pepper
- 1/3 cup balsamic vinegar
- 2 tbs coarsely ground mustard
- 1 tbs sugar
- 4 tbs olive oil
- 4 cloves finely chopped garlic
- 1 tbs chopped fresh thyme
- 6 + ounces arugula or spinach
- 1 cup grapes, preferably red, cut in half
- 1/2 cup crumbled feta cheese
Preparation
Step 1
Season chicken with salt & pepper. Mix vinegar, mustard and sugar together. Set aside.
Heat olive oil until hot. Cook chicken until it starts to brown, about 1 minute. Add the garlic and thyme and cook 1 minutes. Pour in the vinegar mixture and cook until thick and glossy, about 1 minute more.
Arrange greens on a platter. Top with chicken and warm sauce. Sprinkle with grapes and cheese.
