Ingredients
- 1 c rice
- 1 large stalk celery, finely chopped
- 1/4 cup finely chopped sweet onion
- 3/4 cup frozen peas and carrots
- 3/4 cup frozen sweet corn
- 3/4 tsp oregano
- 2 cups chicken broth
- 1/2 tsp garlic salt
- 1/4-1/2 tsp sea salt
- 1/4 tsp pepper
- 2 T butter
- 1/3 c slivered almonds
Preparation
Step 1
Brown rice, almonds, and sweet onion with butter, then add the celery. Add the chicken broth, salt and seasoning, and bring to a quick boil then simmer on low (covered with a lid). When almost all the chicken broth is evaporated, add the frozen veggies. Cover with lid and let it continue cooking on low until all the liquid is evaporated and veggies have defrosted.
