Ingredients
- Frosting:
- 3 cups flour
- 1 teasp. cinnamon
- 1 teasp. baking soda
- 1 teasp. baking powder
- 1/2 Teasp. salt
- 2 cups grated carrots
- 1oz. can of chopped pecans
- 1 can crushed pineapple (6oz.)
- 1 1/2 teasp. vanilla extract
- 3 eggs
- 1 1/2 cups veg. oil
- 2 cups sugar
- 1 8oz pkg. cream cheese
- 1/2 lb. butter softened
- 1lb pkg. conf. sugar
- 1 teasp. vanilla

Preparation
Step 1
1st. Bowl: Sift first 5 ing. and set aside
2nd. Bowl: Mix carrots, pecans, pineapple and vanilla
In a separate bowl Beat eggs oil and sugar, then add 1/2 contents of each bowl by hand, do not over mix
Grease 2-9" round and line with parchment or waxed paper
Pour 1/2 batter in each-Bake 325 degrees for 35-45 mins. Wait 10 mins. before removing cake from pans.
Cool on wire rack.
