Ingredients

    cups flour

    teasp. cinnamon

  • 1

    teasp. baking soda

  • 1

    teasp. baking powder

  • 1/2

    Teasp. salt

  • 2

    cups grated carrots

  • 1oz. can of chopped pecans

  • 1

    can crushed pineapple (6oz.)

  • 1 1/2

    teasp. vanilla extract

  • 3

    eggs

  • 1 1/2

    cups veg. oil

  • 2

    cups sugar

  • Frosting:

  • 1

    8oz pkg. cream cheese

  • 1/2

    lb. butter softened

  • 1lb pkg. conf. sugar

  • 1

    teasp. vanilla

Directions

1st. Bowl: Sift first 5 ing. and set aside 2nd. Bowl: Mix carrots, pecans, pineapple and vanilla In a separate bowl Beat eggs oil and sugar, then add 1/2 contents of each bowl by hand, do not over mix Grease 2-9" round and line with parchment or waxed paper Pour 1/2 batter in each-Bake 325 degrees for 35-45 mins. Wait 10 mins. before removing cake from pans. Cool on wire rack.
