Fancy-Shmantzy Stuffed Peppers

Ingredients

  • 4 green peppers
  • 1/2 pound ground beef
  • 3 Italian sausages
  • 1/2 onion, chopped
  • 1 cup beef broth
  • 1/2 of an 8 oz package of Pepperidge Farm Stuffing mix
  • 1 tablespoon butter or margarine
  • Tomato sauce (optional)
  • Shredded cheddar cheese (optional)

Preparation

Step 1

Saute onion in a frying pan.
Saute hamburger and sausage, which has been removed from its casings) in another pan until no longer pink. Mix onion and meat.
Heat the beef broth and butter till hot; mix broth into the herb stuffing and blend. Now mix meat mixture with stuffing mixture. Set aside.
Wash peppers, cut tops off and remove seeds.
Precook peppers in a pan of boiling water for 10 minutes (or microwave till somewhat tender. Cool and stuff with meat mixture. Bake in casserole in 325 degree oven for 40 minutes, uncovered.

If desired, top each pepper with a little tomato sauce and shredded cheese during baking.
