Ingredients
- 1/2 oz. peeled ginger
- 1/2 lime, peeled
- 1/2 C. water
- 1/4 C. brown sugar
- 1 T. dark rum
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 1/4 tsp. thyme
- 1 red pepper, thinly sliced
- 2 yellow banana peppers or bell peppers
- 6 (6-8oz) filet mignons at room temperature
- 1/2 T. butter
Preparation
Step 1
To prepare sauce: In food processor or blender, puree ginger, lime and 1/2 cup of water. When blended, add brown sugar, rum, salt, pepper and thyme. Ladle mixture into a saute pan containing pepper slices. Cook over medium heat until liquid is reduced by about 1/3. Place filets in broiler pan. Broil 4-5 minutes on each side for rare, or 6-7 minutes for medium. When filets are ready, add butter to sauce. Cook until mixture thickens slightly. Put each filet on a plate. Top with sauce.
