Vegetable Tostados

Ingredients

  • 3 Tbs vegetable oil
  • 2 cups corn kernels, cooked
  • 1 cup chopped onion
  • 3 cloves garlic, minced
  • 4 medium tomatoes, roughly chopped
  • 3 medium zucchini, diced
  • 1 can black beans, drained and rinsed
  • handful cilantro, chopped
  • 1/4 tsp black pepper
  • 8 tostados
  • tomatillo or red salsa
  • 1 cup grated Monterrey jack cheese or queso fresco

Preparation

Step 1

Heat oil in a large skillet over medium high heat. Cook onion, stirring until it carmelizes, 5 minutes. Add garlic; cook 1 minute. Add tomatoes; cook 10 minutes. Add zucchini; cook until tender, 10 minutes. Season with salt and pepper. Add corn, beans, handful chopped cilantro. Cook 3 more minutes. Split filling among tostados; top each with cheese and salsa.
