Ingredients
- 4 eggs
- 1/2 cup half and half
- 1 tsp vanilla
- Pinch of cinnamon
- Pinch of salt
- 4 oz cream cheese
- 3 Tbsp apple butter
- 8 slices egg bread
- 1/2 cup granola
Preparation
Step 1
Combine cream cheese and apple butter in a bowl. Spread 1 ounce of filling on 4 slices of bread. Top with remaining slices, pressing down gently, forming 4 sandwiches.
Combine the eggs, half and half, vanilla, cinnamon and salt in a shallow dish. Dip each sandwich into custard and then into granola. Melt 2 Tbsp of butter over medium heat. Cook each sandwich until golden brown on both sides, about 3 minutes per side.
