Mexican Rice

Ingredients

  • 1 c. rice
  • 1 can tomatoes
  • 1/2 onion
  • 1 clove garlic
  • 1/2 bunch fresh cilantro
  • 1 t. salt
  • 1/2 t. pepper
  • 4 T. chopped green chilies

Preparation

Step 1

Brown rice, onion and garlic in 3 T. olive oil. When onion is soft, add can of tomatoes and 1 can water. Add chopped cilantro. Cook until all moisture is absorbed. Taste and add more salt if needed.
