Cake: Vanilla sheet cake with Chocolate Ganache

I made this for my sister's birthday one year and it was fantastic. This cake really feeds a big crowd.

Ingredients

  • Frosting:
  • 2 1/4 sticks soft butter
  • 3 cups sugar
  • 6 extra large eggs, room temp
  • 1 cup sour cream, room temp
  • 1 1/2 teaspoon vanilla extract
  • zest of 1 whole lemon
  • 3 cups flour
  • 1/3 cup cornstarch
  • 1 teaspoon baking soda
  • 24 ounces semisweet chocolate chips
  • 1 1/2 cups heavy cream
  • 2 tablespoons light corn syrup
  • 1/2 teaspoon vanilla
  • 4 tablespoons soft butter

Preparation

Step 1

Preheat oven 350*
Butter and flour 12 x 8 sheet pan

Cake:

Cream the butter and sugar on medium high speed until light and fluffy, about 5 minutes. On medium speed, add the eggs, two at a time, then the sour cream, vanilla, and lemon zest, scraping the bowl. Mix well.

Sift together the flour, cornstarch, and baking soda. With the mixer on low, slowly add the flour mixture and stir just until smooth. Finish by hand and spread out onto the prepared pan. Smooth the top to make it even. Bake for 25 to 30 minutes or until toothpick come out clean.

Frosting:

Place the chocolate chips and heavy cream in a bowl to melt over steamed water. Off the heat, add the corn syrup and vanilla and allow the chocolate mixture to cool to room temperature. In the bowl of a mixer, whisk the chocolate mixture and softened butter on medium speed for a few minutes, until it's thickened.
