Chicken Dinner in Foil

This is a great recipe for everyone in the family to make. You might like to make the packs the night before and keep refrigerated until ready to cook. Fun fare!

Allow ½ chicken breast per person, approximately 5 oz uncooked. Brown chicken breasts in a sprayed nonstick pan. When browned, place each breast on a double-layered 12-inch square of foil.

Ingredients

  • On each chicken breast half, place:
  • 1/2 cup frozen peas and carrots
  • 1 slice onion
  • 1/2 potato, cut into wedges
  • 1 tbsp white wine or broth
  • 2 tbsp meatless tomato sauce
  • Sprinkle over all:
  • Garlic powder
  • Onion powder
  • Mixed Italian spices
  • Lite salt, to taste
  • Pepper, to taste

Preparation

Step 1

Fold over the foil and seal tightly to keep juices in the package. Place packages on a baking sheet and bake in a 375 F oven approximately 1 hour or until chicken and vegetables test done. Remove chicken from foil pack before serving. Also cooks great on the grill.
