Chicken Dinner in Foil

This is a great recipe for everyone in the family to make. You might like to make the packs the night before and keep refrigerated until ready to cook. Fun fare!
Allow ½ chicken breast per person, approximately 5 oz uncooked. Brown chicken breasts in a sprayed nonstick pan. When browned, place each breast on a double-layered 12-inch square of foil.

Ingredients
- On each chicken breast half, place:
- 1/2 cup frozen peas and carrots
- 1 slice onion
- 1/2 potato, cut into wedges
- 1 tbsp white wine or broth
- 2 tbsp meatless tomato sauce
- Sprinkle over all:
- Garlic powder
- Onion powder
- Mixed Italian spices
- Lite salt, to taste
- Pepper, to taste
Preparation
Step 1
Fold over the foil and seal tightly to keep juices in the package. Place packages on a baking sheet and bake in a 375 F oven approximately 1 hour or until chicken and vegetables test done. Remove chicken from foil pack before serving. Also cooks great on the grill.
