ROLLS - CINNAMON BUNS

Ingredients

  • 4 C. flour
  • 1 T. SAF Instant Gold Label Yeast
  • 1/2 C. sugar
  • 1 tsp. salt
  • 1/2 tsp. cinnamon plus more
  • 1 1/4 C. warm milk
  • 2 eggs
  • 4 T. softened unsalted butter plus more melted
  • 3/4 C. raisins
  • brown sugar
  • 1/2 C. powdered sugar
  • 3 T. warm water

Preparation

Step 1

1. Combine flour, yeast, sugar, salt and 1/2 tsp cinnamon; stir in warm milk and eggs. Turn out onto a floured board and knead for 10-15 minutes until smooth.

2. Knead in 4 T. softened unsalted butter, then raisins. Place in a bowl, cover and let rise until double in bulk.

3. Turn out, flatten and roll out to 20" x 16" x 1/4" thick. Brush with melted butter, sprinkle with cinnamon and brown sugar, and roll up from the long side. Seal edge. Slice into twenty 3/4" slices. Arrange on a buttered baking sheet, spacing apart for expansion. Cover and let rise again for 30 min.

4. Bake in a 375° oven for 25 min. until golden. Brush tops with 1/2 cup powdered sugar dissolved in 3 T. warm water.
