Ingredients
- 1 1/2 cups zucchini, unpeeled and grated
- 2 tbsp onion, chopped
- 1/4 cup Parmesan cheese
- 1/4 cup flour
- 2 eggs
- 2 tbsp mayonnaise
- 1/4 tsp oregano
- Salt, to taste
- Pepper, to taste
Preparation
Step 1
Melt 1 tablespoon of butter in a large skillet. Mix together all the above ingredients. Spoon the batter (2 heaping tablespoons) into the skillet. Flatten with a spatula. Cook over medium heat until browned on both sides. Serve plain or top with sour cream and chives or top with tomato sauce and grated cheese. Goes well with chops, roasts or chicken.
