Zucchini Brownies (Eggless)

Note: Grate and freeze summer ripe zucchini for winter baking.

Ingredients
- 2 cups flour
- 1 1/4 cups sugar
- 1 tsp salt
- 1 1/2 tsp soda
- 1/4 cup cocoa
- 1/2 cup nuts, optional
- 1/2 cup oil
- 2 tsp vanilla
- 2 cups finely grated zucchini
Preparation
Step 1
Mix together in a bowl flour, sugar, salt, soda, cocoa and nuts, then add oil, vanilla and zucchini. Mix by hand until moistened. Pour into a well-greased 9-by-13-inch pan. Bake at 350 F for 25 minutes. Cool before cutting.
