Red Velvet Cake

My mom made this cake every Christmas for us. The frosting is cooked so it different than most red velvet cakes.

Ingredients

  • 1 1/2 c sugar
  • 1/2 c shortening
  • 2 eggs
  • 2 c flour
  • 1 tsp salt
  • 1 T cocoa
  • 1 c buttermilk
  • 2 oz red food coloring
  • 1 tsp vanilla
  • 1 tsp soda
  • 1 T cider vinegar
  • Frosting;
  • 1 c milk
  • 1/4 tsp salt
  • 1/4 c flour
  • 1 c sugar
  • 1 c butter-must only use butter for this recipe
  • 2 teas vanilla

Preparation

Step 1

Using a hand mixer cream shortening and sugar. Add eggs and beat well. Add flour, salt, and cocoa 3 times and add alternately with buttermilk. Add the food coloring and vanilla. By hand fold in soda dissolved in the vinegar but do not beat. Bake in 2 greased and floured 9" pans. Bake at 350 for 25 to 30 minutes. Cool.

For frosting heat 1 c milk, 1/4 tsp salt and 1/4 c flour until very thick. Cool completely. Beat until fluffy and add 1 c sugar and 1 c butter. Add the cooled mixture and beat until creamy. Then add 2 teas vanilla until smooth and frost the cake.
