Ingredients
- 1 (8 1/2-0Z.)pkg. Nabisco Famous
- chocolate wafers .
- 1/2 c. (1 stick) butter
- 1 3/4 sugar, divided .
- 1 (4-0:2.)bar German's sweet Chocolate
- 4 (8~oz.)Pkg. cream cheese
- 2 tsp. Instant espresso or coffee
- 2 tbsp. Sambuca Romana liqueur (or rum, or water)
- Pinch of salt
- 4 eggs
- 2 c. dairy sour cream
- 2 tsp. Sambuca Romana liqueur (or 1 tsp. rum, or skip it)
Preparation

Prepare the crust: In a food processor or by beating with rocks, render the Famous wafers into fine crumbs. Melt the butter in a small saucepan, Combine crumbs, butter and 1/4 cup of the sugar and press the mixture across the bottom -and up the sides of-a 10- inch spring form pan.
Prepare the filling: Preheat the oven to 350 degrees. Melt the chocolate in a small. pan over very low heat. In. the large bowl of the electric mixer soften the cream cheese and eat in 1 1/4 cups of the sugar. Dissolve the espresso in the liqueur or water and beat that into the cream cheese mixture along with. the chocolate and salt. Add the eggs, one at a time, beating at low speed only enough-to ensure that the mixture is well blended. Don't whip in lots of extra air. Pour the filling into the crust and bake 45 minutes. Allow the cheesecake to rest outside the oven 10 minutes while you prepare' the topping, but don't turn the oven off.
In a small bowl combine the sour cream, the remaining 1/4 cup of sugar and the 2 teaspoons of Sambuca, the 1
teaspoon of rum or the nothing. When the cheesecake has been out of. the oven for its 10 minutes, gently pour and spread the topping over it and return it to the oven for another 10 minutes. Put it in the refrigerator immediately and chill &t least 3 hours. Serves 12. Yum!
