Cake: Washington Apple

This cake is delicious alone or with frosting. It is out of the little book my Uncle Rob gave me with a bunch of recipes from the Inns throughout the United States.

Ingredients

  • Cream Cheese Icing:
  • 3 eggs
  • 2 cups sugar
  • 1 cup cooking oil
  • 2 cups flour
  • 2 teaspoons cinnamon
  • 1 teaspoon baking soda
  • 1 teaspoon vanilla
  • 1 cup chopped walnuts
  • 4 cups peeled and thinly sliced tart apples (5 medium)
  • 2 3 ounce packages soft cream cheese
  • 1/4 cup melted butter
  • 2 cups powdered sugar
  • 1 teaspoon vanilla or 1 teaspoon lemon juice

Preparation

Step 1

Preheat oven 350*
Butter a 13 x 9 pan

Beat eggs with mixer until thick and light. Combine sugar and oil; pour into eggs with mixer on medium speed.

Sift together flour, cinnamon and baking soda, then add to egg mixture.

Add vanilla and then stir in walnuts.

Layer the apples in buttered baking pan. Pour batter over apples and bake for 1 hour. Remove from oven and cool.

Cream Cheese Icing:

Beat cream cheese until fluffy. Beat in melted butter, then beat in powdered sugar and vanilla or lemon juice. Spread over the cooled cake. Refrigerate.
