Wholesome Oat Muffins

Ingredients

  • 3/4 cup + 2 tbsp oats
  • 1 cup buttermilk
  • 1 1/4 cup whole wheat flour
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp cinnamon
  • 1/4 tsp salt
  • 2/3 cups walnuts
  • 1/3 cup canola oil
  • 1 egg
  • 1/3 cup brown sugar subsitute
  • 1 tsp vanilla

Preparation

Step 1

1. Preheat oven to 425. Coat 12 cup muffin pan with non stick spray
2. In a small bowl combine 3/4 cups oats and buttermilk and let sit for 30 minutes.
3. In a medium bowl, combine flour, baking powder, baking soda, cinnamon, salt and walnuts.
4. In a large bowl, stir together the oil, egg, brown sugar, and vanilla until well blended. Stir in oat mixture. Stire in flour mixture until combined. Do not overmix.
5. Divide batter among pans, filling 2/3 full. Sprinkle with remaining oats. Bake for 11-15 minutes
