Strawberry Cake

Ingredients
- Frosting:
- 145 g white or brown sugar
- 2-3 table spoon marizena
- 80 g butter, softened
- 2 eggs (room temperature)
- 140 g sifted cake flour
- 1-2 table spoon g baking soda
- 40 ml whole milk, room temperature
- 40 ml A38 (sour milk)
- 2 table spoon vanilla sugar
- 150 g strawberry puree made from frozen/fresh sweetened strawberries
- Chopped fresh strawberries can be added to the batter.
- 2 cups confectioners' sugar
- 2 tablespoons butter, softened
- 2 tablespoons milk
- 1/2 teaspoon vanilla extract / vanilla sugar

Preparation
Step 1
1. Preheat the oven to 180 C. Grease and flour two 23cm round cake tins.
2. In a large bowl, cream together the butter, sugar and powdered strawberry jelly until light and fluffy. Beat in eggs one at a time, mixing well after each. Combine the flour and baking soda; stir into the batter alternately with the milk. Blend in vanilla and strawberry puree. Divide the batter evenly between the prepared tins or pour in one big pan.
3. Bake for 25 to 30 minutes in the preheated oven, or until a small knife inserted into the centre of the cake comes out clean. Allow cakes to cool in their tins over a wire rack for at least 10 minutes, before tapping out to cool completely.
4. Frosting:
In a bowl, combine the sugar, butter, milk and vanilla. Beat on medium speed until smooth and fluffy. Spread over bread. Yield: 1 cups.
