Ingredients

  • 1 1/4 cup sugar
  • 1/2 cup vegetable oil
  • 3 eggs
  • 2 tsp. vanilla
  • 2 cups flour
  • 2 tsp. baking powder
  • 1/4 tsp. salt
  • 1 tsp. cinnamon
  • 1 1/2 cups grated carrots
  • 1/2 cup raisins
  • 1/2 cup flaked coconut
  • 1/2 cup peeled diced raw apple
  • 1/2 cup chopped pecans

Preparation

Step 1

Preheat oven to 350. Combine sugar and next 3 ingredients in a large bowl.

Combine flour and next 3 ingredients in another bowl. Add to the liquid ingredients
and stir until just moistened. Gently fold in remaining ingredients.

Pour into well-greased muffin tins to about 2/3 full. Bake 20-25 min. until golden on
the edges and tops. Makes 16 muffins.

My large muffin pan takes 25 min....smaller tins 30....because of the metal.
