Ingredients

  • 1 LB THIN STRING BEANS, STEMMED
  • 1 YELLOW ONION, COARSELY CHOPPED
  • 4 CLOVES OF GARLIC FINELY CHOPPED
  • 2 TBSP OLIVE OIL
  • 4 LARGE TOMATOES, PEELED SEEDED AND COARSELY CHOPPED
  • (CAN USE CANS - ~ 1 1/2)
  • 1/2 CUP DRY WHITE WINE
  • 1/2 CUP NICOISE OR OTHER IMPORTED BLACK OLIVES, PITTED
  • 1 TBSP LEMON JUICE
  • PEPPER

Preparation

Step 1

Blanch the green beans until just tender, 3-4 minutes. Drain and refresh under cold water. Beans should be a bit crispy.

In a skillet, cook the onion in olive oil over low heat for 5 minutes. Add in garlic, cook for 30 seconds. Add tomatoes and wine. Simmer for 20 minutes, stirring occasionally.

Toss olives and reserved green beans into the skillet. Heat through.

Sprinkle with lemon juice and pepper to taste.
