Ingredients
- 1-1/2 cups sugar
- 1-1/2 cups packed brown sugar
- 1/4 teaspoon salt
- 1/4 teaspoon baking soda
- 1 cup sour cream
- 1 Tablespoon light corn syrup
- 2 Tablespoons butter or margarine
- 1 teaspoon vanilla
- 2 cups pecans
Preparation
Step 1
Combine sugars, salt, baking soda, sour cream and corn syrup in large heavy saucepan.
Cook over moderate heat to thread stage (230) stirring constantly.
Remove from heat and beat in butter, vanilla and pecans.
Cool to warm, then beat until mixture begins to loose its sheen.
Working rapidly to prevent candy from setting, drop be teaspoonfuls onto waxed paper.
If candy begins to set, return to heat or put pot in bowl of oiling water until mixture is soft and smooth.
When set and cool, remove pralines to a tray.
