Squash Muffins

Ingredients

  • 1 1/2 cups (375 ml) flour
  • 1/2 cup (125 ml) sugar
  • 2 tsp (10 ml) baking powder
  • 3/4 tsp (4 ml) salt
  • 1/2 tsp (3 ml) cinnamon
  • 1/2 tsp (3 ml) nutmeg
  • 4 tbsp (60 ml) butter
  • 1/2 cup (125 ml) currants
  • 1 egg, beaten
  • 1/2 cup (125 ml) cooked and pureed winter squash
  • 1/2 cup (125 ml) milk
  • Additional sugar

Preparation

Step 1

Sift together flour, sugar, baking powder, salt, cinnamon and nutmeg. Cut in butter with a pastry blender and add currants. Combine egg, squash and milk and add to flour mixture. Mix just enough to combine. Fill 12 greased muffin tin wells 2/3 full. Sprinkle ¼ tsp (2 ml) sugar over each muffin. Bake 18 to 20 minutes in an oven preheated to 400 F (210 C).
