Chicken Pesto Skewers

Ingredients

  • vegetable oil spray
  • 2 pounds boneless, skinless chicken breasts
  • 1/4 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 16 (8 inch) bamboo skewers
  • 8 tablespoons (1/2 cup) basil pesto
  • fresh basil tops, optional for garnish
  • 1 lemon, cut in wedges, optional for garnish

Preparation

Step 1

1. Preheat the oven to 375 and spray a sheet pan with vegetable oil
2. cut the chicken breasts into 16 equal strips about 1/2 inch wide and season with salt and pepper.
3. Thread 1 chicken strip per skewer until flat on the stick, and line up close together on the sheet pan.
4. Using a rubber spatula or spoon, spread a good layer of the pesto all over the tops of the chicken strips, keeping as much of the pesto as possible piled on top of the chicken
5. Place in the oven and bake for about 25 minutes, or until fully cooked through. Serve hot garnished with fresh basil tops and lemon wedges, if desired.
