Ingredients
- 1 large Granny Smith apple, peeled, cored, cut into 1/2 inch cubes
- 1 1/2 cups 1/2 inch cubes Manchego cheese (about 6 ounces)
- 2 tablespoons chopped toasted almonds
- 1 tablespoon chopped fresh chives
- 1/4 cup extra-virgin olive oil
- 1 tablespoon unseasoned rice vinegar
- (you may use apple cider vinegar for a stronger taste)
Preparation
Step 1
Whisk together olive oil and vinegar.
Mix apples, cheese, and chives in a bowl. Add dressing: toss to coat. Season to taste with salt and pepper.
Divide among 6 plates or small bowls and sprinkle with chopped almonds.
