Ingredients
- 1.5 cups water
- 2 eggs
- 1.75 cup blanched almond flour
- 1/4 cup flax seed meal
- 1 tablespoon whole flax seeds
- 1/4 teaspoon baking powder

Put in bread machine in order given, cake setting which has one knead cycle and "regular" crust.
Watch the kneading cycle as depending on the humidity you may have to add more water and scrapping down the sides of the baking pan while kneading. Also watch the baking cycle as I stopped it about 25 minutes early as it was cooking too crusty for my taste. I'm going to try variations on this by trying just egg whites to see if I can get a fluffier consistency. I will also try some of the other baking cycles to see I can get a different crust. Tasty straight w/ some butter on. Also fried in olive oil and topped with ham and swiss for the photo was delicious! I got about 7 slices.
