Chinese Chicken

Ingredients

  • 2 lb. chicken breast, cubed
  • 1 Tbsp. olive oil
  • 1 garlic clove, crushed
  • 3/4 tea. red pepper flakes
  • 1/4 cup apple juice
  • 1/3 cup brown sugar
  • 2 Tbsp. ketchup
  • 1 tea. Sriracha sauce (for add'l heat)
  • 1 Tbsp. cider vinegar
  • 1/2 cup water
  • 1/3 cup soy sauce
  • 1 Tbsp. cornstarch

Preparation

Step 1

Saute chicken in oil until browned. Remove chicken. Add remaining ingredients (except cornstarch)and heat over medium heat until well blended and dissolved. Add chicken and bring to a hard boil Reduce heat and simmer 20 minutes uncovered. Add cornstarch to thicken.

Serve over rice
