Banana Bars

Ingredients

  • 1 Heat oven to 350°F. Grease bottom and sides of rectangular pan, 13x9x2 inches, with shortening. In large bowl, mix granulated sugar, bananas, oil and eggs with spoon. Stir in flour, baking powder, baking soda, cinnamon and salt. Spread in pan.
  • 2 Bake bars 25 to 30 minutes or until toothpick inserted in center comes out clean. Cool completely, about 1 hour.
  • 3 Meanwhile, in medium bowl, mix cream cheese, butter and vanilla with electric mixer on medium speed until blended. Gradually beat in powdered sugar with spoon, scraping bowl occasionally, until smooth and spreadable.
  • 4 Spread cooled bars with Cream Cheese Frosting. For bars, cut into 6 row by 4 rows. Store covered in refrigerator.

An easy recipe to make and the banana bread was great even with the sugar substitute I used. No one was a fan of the frosting though. Since it called for cream cheese, it was slighty too sour for our taste. I added a little of the sugar substitute to the frosting to sweeten it up a bit but I dont think the cream cheese was a good match. We ended up not using the frosting. For bars, the pan size is ok, but beware not to overcook. I suggest subtracting 2 minutes from the cooking time and check on them every 30 seconds until done to your liking. I subtracted 1 minute from the cooking time and they came out slighty overdone, dark and not moist but still soft. 3 spoons rating for the as-is recipe because the frosting is just not a good choice.

Great recipe! Everyone loved it. Easy to make. I used 3 bananas giving it a more banana-y taste.
