Ingredients
- 1 cup whole wheat flour
- 2 tbsp wheat germ
- 2 tbsp bran
- 1/4 tsp baking powder
- 1 tsp baking soda
- 1/4 cup oil
- 1/4 cup honey
- 1 egg
- 1/2 cup milk
- 1 cup grated zucchini
- 1/4 cup sunflower seeds
- 1/2 cup huckleberries
Preparation
Step 1
Combine dry ingredients in a large bowl. In a small bowl combine the oil, honey, egg and milk. Add the liquid ingredients to the dry ingredients. Stir in zucchini, sunflower seeds and the huckleberries. Spoon into buttered muffin tins, filling them about 2/3 full. Bake at 325 F for 25 to 30 minutes.
