Molten Chocolate Cake

Ingredients

  • 4 oz. dark chocolate (Callebaut or Valrhona), chopped
  • 1/2 cup/ 1 stick/ 4 oz. butter
  • 2 yolks
  • 2 whole eggs
  • 1 Tbsp sugar
  • 1 Tbsp. all-purpose flour
  • Pinch of salt
  • Ice cream, whipped cream, raspberry coulis etc. for garnish

Preparation

Step 1

Butter and sugar 4 (4oz) ramekins or brioche molds. Refrigerate if you have time.

Melt the chocolate and butter together over a double broiler. Allow to cool to room temperature. In a separate bowl, whisk together the yolks and whole eggs then add the sugar and flour. Whisk into the chocolate mixture and stir just until combined. Pour the mixture into the prepared molds. The cakes can be refrigerated at this point for up to 2 days. Place in a 400 degree oven for 6-10 minutes depending on vessel, unmold and serve with ice cream, raspberry coulis or other garnish.
