Vanilla Bean Wafers

This recipe has been in my family for over 100 years. It is not Christmas for our family without these delectable delights. Bet you can't eat just one!

Ingredients
- 1 lb Unsalted Butter (softened)
- 1 cup Pecans or Almonds (very finely chopped)
- 1 cup Sugar
- 4 cups Flour
- Powdered Sugar**
- Vanilla Bean**

**The secret to this cookie is placing the Vanilla Bean into the powdered sugar at least one month before you plan on making the cookies. You can snip the bean into pieces or slice it open. Many bakers keep a vanilla bean in their powdered sugar all the time.
Cream butter well. Gradually add sugar, then flour, and lastly, the nuts. Dough should be fairly stiff.
Divide the dough into 5 or six balls. Roll each ball into uniform logs (less than the diameter of a quarter) They will be a delicate cookie and you want to be able to fit them in your mouth in one bite.
Roll each log in wax paper twist ends to seal and refrigerate at least overnight.
When ready to bake, preheat oven to 350 F
Take each log and slice into rounds approximately 1/4 inch thick. Place on cookie sheet and bake 10-13 minutes. They should just start to turn a slight golden brown. They will be just slightly larger than the raw slice.
While they are still warm, roll each cookie into the vanilla bean powdered sugar.
Let cool completely before eating. Enjoy!
