Summer Pasta Salad

Ingredients

  • 1/2 LB. Mini Bow Tie Pasta
  • 2 T. Olive Oil
  • 1/2 LB. Cherry Tomatoes sliced in half
  • 1/2 Cup Basil Pesto
  • 1/2 LB. Fresh Mozzarella Cheese cut into small cubes
  • Parmigiana Cheese
  • Salt & Pepper
  • Optional- Cucumbers, toasted Pine Nuts, Feta Cheese instead of Mozzarella

Preparation

Step 1

Cook Pasta to pkg. directions, drain. When cooled add remaining ingredients and toss together. Season with Salt and Pepper.
