Ingredients
- 2 lbs baking potatoes (my favorite are Idaho potatoes); remove skin if desired.
- 2 tbs butter
- 1 tbs flour
- 1/2 medium Spanish onion (chopped)
- 1 can evaporated milk
- 1/2 cup grated Parmesan cheese
- 1 pkg Cheddar cheese (8 oz)
Preparation
Step 1
1. Scrub and wash potatoes and slice thinly.
2. Melt butter in a sauce pan; add onions, and flour and stir. Add salt and pepper to taste and stir again. Stir in cold milk gradually and bring to a boil stirring constantly to avoid lumps, until the sauce thickens a little bit. Turn off heat. Add the sliced potatoes to the sauce and stir to make sure that the potatoes get covered with the sauce.
3. In a casserole, arrange layers of the potatoes with the grated and Cheddar cheese in between layers and on top.
Cover and bake for 25 minutes at 375° F.
4. Remove cover, raise temperature to 450° and continue baking until it turns golden brown. Remove from oven. Serve hot. Serves 6
