Ingredients
- 1 cup chopped cooked chicken
- 1/4 cup ranch dressing
- 2 tsp. chili powder
- 1/2 tsp. grated lime peel
- 4 flour tortillas (8 to 10 inch)
- 1 cup shredded Mexican cheese blend (4 oz)
- 2 medium green onions, thinly sliced (2 Tbsp.)
- 1 Tbsp. vegetable oil
- Sour cream, if desired
Preparation
Step 1
Heat gas or charcoal grill. In medium bowl, mix chicken, dressing, chili powder and lime peel. Spread chicken mixture over half of each tortilla; sprinkle with cheese and onions. Fold tortilla over and press down. Brush tops with oil.
Place quesadillas, oil sides down, on grill. Brush tops with remaining oil. Cover grill; cook over medium-low heat 4 to 6 minutes, turning once, until both sides are golden brown and cheese is melted. Cut each into 8 wedges. Serve with sour cream.
