Linguine with Zucchini and Kielbasa

Ingredients

  • 6 ounces linguine
  • 1/4 cup red wine vinegar
  • 1 tablespoon sugar
  • 1 tablespoon Dijon-style mustard
  • 1 teaspoon dried basil, crushed
  • 12 ounces kielbasa, halved lengthwise and cut into 1/4 inch-thick slices
  • 1 medium onion, chopped
  • 2 small zucchini, thinly sliced

Preparation

Step 1

Cook linguine in boiling salted water according to package directions. Drain. Set aside.
For dressing, in a small mixing bowl combine vinegar, sugar, Dijon-style mustard, basil, and 2 tablespoons water. Set aside.
In medium skillet, cook kielbasa, pepper, and onion till kielbasa is heated through and onion is tender. Add dressing and zucchini and cook 2 minutes more. Toss with linguine. Makes 4 servings.
