Slow Cooker Apple spiced Sweet Potatoes

Ingredients

  • Nonstick cooking spray
  • 3 1/2 to 4 lbs sweet potatoes, peeled and cut into 2-inch chunks
  • 1 20-oz can apple pie filling
  • 2/3 cup golden raisins
  • 3 Tbsp butter, cut up
  • 1 1/2 tsp apple pie spice
  • 1 cup coarsely chopped pecans
  • 1/3 cup sugar
  • 2 Tbsp butter

Preparation

Step 1

1. Lightly coat a 3 1/2- or 4-quart slow cooker liner with cooking spray. Add sweet potato chunks, apple pie filling, raisins, the 3 tablespoons butter, and spple pie spice; stir gently.

2. cover; cook on low-heat setting for 6 to 8 hours or on high-heat setting for 3 to 4 hours.

3. Meanwhile, for candied pecans, in a heavy large skillet combine pecans, sugar, and the 2 tablespoons butter. Cook and stir over medium heat for 8 to 10 minutes or until sugar mixture clinging to the nuts turns golden and starts to melt. Pour nut mixture onto a large piece of foil to cool completely. When coolk, coarsely crush the nut mixture.

4. To serve, top potatoes with the candied pecans.
