Keftethes Greek Meatballs

Ingredients

  • 5 lbs. of lean ground beef
  • 3 cups bread crumbs, plain
  • 2 - 3 cups of water
  • 2 cups finely chopped onions
  • 1 tbsps. of oregano
  • 2/3 cup of dried mint
  • 2/3 cup of dried parsley
  • 3/4 tsp. garlic
  • 1 1/2 tsp. salt ( to taste)
  • 1 1/2 tsp. black pepper
  • 4 eggs
  • 1/4 vegetable oil

Preparation

Step 1

Preheat oven to 375 degrees.

Place the bread crumbs in a very large bowl and moisten with water (A little at a time) Wait five to ten minutes until the bred crumbs have had a chance to absorb the water and swell up to a thick paste consistency.

Add the ground beef and the remaining ingredients. Mix well. Roll the meat into balls and place on a baking sheet lined with parchment paper.

Bake 20 - 40 minutes depending on size of the meatballs. Makes about a 140 small meatballs.
