Gingerbread Cookie w/ Stilton and Spiced Chutney

Arrange assorted gingerbread cookies on a serving tray. Top with a slice of Stilton cheese and a tsp of chutney. Make chutney using the recipe below or pick out a good spiced chutney from the grocery store.

Ingredients
- Chutney:
- 4 cups dried fruit, such as figs, apricots and prunes
- 1/2 cup maple syrup
- 1/3 cup water
- 1/4 cup cognac
- 2-3 whole star anis
- 2 bay leafs
- 2 tsp whole cloves
- 1 tsp whole allspice
- 1 cinnamon stick
- 1/2 cup toasted walnuts

Preparation
Step 1
Chop dried fruit into equal pieces and place in a pot. Add syrup, water and cognac. Put the cloves and allspice in a spice infuser and add to the pot. Add the rest of the spices, cover the pot and bring to a boil. Lower heat, and let it simmer until the fruit is soft (approximately 20 minutes). Add toasted walnuts and let cool. Transfer to a tight fitted jar and store in the refrigerator.
