Green Beans with Fresh tomato salsa

Ingredients
- 4 slices good quality smoked bacon, chopped
- 3 cups green beans trimmed
- 1 1/2 c different colored tomatoes , roughly chopped
- fresh ground sea salt and black pepper
- 1 T red wine vinegar2 T EVOL
- a few sprigs of fresh flat-leaf parsley, leaves picked and finely chopped

Preparation
Step 1
In a small frying pan over medium heat, fry the bacon for a few minutes, stirring often, until crispy and golden. Transfer to a paper towel lined plate to drain. Blanch green beans in a pot of boiling slated water for 5 minutes or until just cooked. Drain and set aside. In a bowl, toss together the tomatoes salt and pepper to taste, vinegar, oil, chopped parsley and reserved bacon bits. Transfer the beans to a serving platter and spoon the fresh salsa over the top
