BREAD - RISTORANTE LUCI ITALIAN HERB

Ingredients

  • 1 1/2 T. dry yeast
  • 3 C. whole milk
  • 6 1/2 C. bread flour
  • 1 1/4 C. all purpose flour
  • 2 1/2 T. sugar
  • 1 1/2 T. salt
  • 1/2 T. minced garlic
  • 1 T. minced onion
  • 1 T. Italian herb mix
  • 1/2 cup olive oil

Preparation

Step 1

1. In a bowl dissolve yeast in milk that has been warmed to 90 degrees. If using a food processor, put flours, sugar, salt, garlic, onion and Italian herb mix in a mixing bowl. Add oil while mixing on low speed, then slowly add yeast and milk mixture until all is added. Continue mixing until dough pulls away from the side of the bowl.

2. If mixing by hand, place flours, sugar, salt, garlic, onion and Italian herb mix in large bowl and stir to combine. Make a well in the middle and add oil, yeast and milk mixture. Gradually stir into the flour mixture. When well combined, turn out on floured surface and knead for 10-15 minutes, adding a little more flour if needed. Continue with following directions.)

3. Place dough in a large oiled bowl let rise until double in size. Punch down; let it double again. Then make into three loaves and place in loaf pans; let them double in size. Bake loaves in 400° oven until brown (about 20 minutes to 1/2 hour).
