Lamb-Stuffed Green Peppers

I prefer to cut the peppers in half and serve as in the photo above.
Cut this recipe in half for Jack and me!

Ingredients

  • 4 large green peppers
  • 1-1/2 cups ground lamb, cooked
  • 1/4 cup uncooked rice
  • 1 small onion, minced
  • 1-1/2 teaspoons salt
  • 1/4 teaspoon pepper
  • 1 8-ounce can tomato sauce
  • 1 cup water
  • Dash cayenne
  • 1 pinch dried basil

Preparation

Step 1

Cut off tops and remove seeds from peppers. Mix lamb, rice, onions, salt and pepper. Stuff peppers about 3/4 full. Stand upright in a small, heavy saucepan with a tight-fitting lid. Pour combined sauce and water plus remaining seasonings over the peppers. Cover and cook very slowly for 40 minutes or until rice is very tender. Add more water if necessary.

OVEN METHOD:
Bake, covered, at 350 degrees for 45 minutes or until rice is tender.
