Hobo “Stew”

Everyone probably has a different name for this dish, which is not really a stew at all, but a packet full of delicious ingredients. I know we started eating it here when my boys came home from summer camp. Turns out they had made this and loved it. For weeks, we would enjoy this at least once a week. I marveled at how easily it got them eating onions and carrots. In fact, I wouldn’t be surprised if kids enjoyed zucchini or even (gasp!) broccoli if you put it into these packets. One of the tricks in getting kids to eat different things is enlisting their help. Since this is just layers of food, they can help with each layer. I cut the carrots into thin sticks, but kids could grate carrots and zucchini, even onion. (It IS important that the veggies all be cut small/thin so they cook with the ground beef as it cooks.) Topped with a touch of cheese and tomato, this is really tasty. Once the packets are open, everyone can add the condiments they like: mustard, ketchup, sliced avocado, relish–they can customize to their hearts’ desire.

Ingredients

  • 4 small red potatoes, washed and very thinly sliced
  • 2 carrots, peeled and cut into small matchsticks or grated
  • 1 medium onion, very thinly sliced
  • 1 pound Laura’s Lean Beef 92% Lean Ground Beef
  • 4 ounces-American cheese
  • 1 tomato, thinly sliced

Preparation

Step 1

1. Heat grill to medium-high. While grill heats, make stew packets: Place 4 large pieces of foil onto counter. Spray very lightly with cooking spray. Divide the potato slices evenly among the 4 pieces of foil. Top each with even amounts of carrot and onion. Crumble 4 ounces of ground beef over each vegetable “stack.” Top each with 1/2 ounce cheese and sliced tomato.

2. Seal foil tightly around contents. Place directly on grill, lower lid and let cook 20 minutes.

3. Serve entire packet,  one on each plate, to diners. Let each diner open foil packet and add desired condiments.
